This week in my kitchen


      Happy Friday ya’ll!  I have a friend who keeps asking me to feature some recipes on the blog each week.  I love her to pieces but I honestly wasn’t sure I wanted to tackle that.  But, since I’ve made it my mission to share all things that I’m passionate about with you, why would this be any different?  I’m at a stage in my life where I can’t spend hours in my kitchen(enter the toddler). BUT, I’m learning I don’t have to in order to make healthy and yummy food for my fam.  So Meredith, this is for you.  

     Each Friday I’ll post a few recipes from my week.  Hopefully it helps you since it will obviously pass the taste test in my house, plus it will keep me accountable to having a few extra special recipes in my rotation for the week.  

     We had a busy week this week.  My oldest son is moving up to kid pitch this fall(gasp) so he’s having practice 3 nights a week…in the summer. So, my evenings feel like school has already started.  Awesome.  It’s good for him and his team, he spends time with his daddy and they have a blast.  SO, I can’t complain.  However, it’s forced me to break away from my grill to have some meals that can be re-heated for the boys when they get home.  I LOVE my crockpot.  Seriously whoever invented that sucker deserves an award.  It’s amazing and I use mine year round.  In the summer it keeps my kitchen cool and is perfect for our busy baseball nights, days spent at the pool or lazy weekends where I don’t feel like getting in the kitchen at 5pm.  

     This week my crockpot meal was spaghetti and meatballs.  Nothing fancy I know. But, I wanted to share this recipe because it was so stinking easy!  I haven’t made homemade meatballs in a while but I couldn’t resist this week.  This recipe made a ton of meatballs ya’ll.  My hubby took them for leftovers the next day plus we had enough to make meatball subs this coming weekend.  My kids LOVED them. Love that.  I try to make at least 1 if not 2 meals a week that leave me with leftovers.  It gives me an automatic night off from cooking.  Here’s the recipe… and here is a picture of mine. 

This is all you need!

Literally throw it all in a bowl, mix it together and roll into balls.  Done. 

I took them out of the oven and put them in the crock pot since we had practice that night and wouldn’t be eating until later

 Thank you Martha Stewart for the amazing meatballs.  They made my family happy this week.  

     I was really craving bruschetta pasta this week.  It just seems summery right?  So, on yet another busy night I made grilled chicken with bruschetta pasta.  This one I made up as I went along but I think it turned out really well and my family loved it.  I tossed some fresh green beans on the side as a bonus(trust my kids this was most definitely NOT a bonus).  I told them to be thankful, shut up and eat.  Ok I didn’t say shut up, I said be quiet but I wanted to say shut up. You get it. Mom of the year. 

Here is the recipe: 
3-4 boneless skinless chicken breasts
sea salt and ground pepper
italian seasoning or herbs de provence
1 box penne pasta
1 small package of cherry tomatoes, sliced in half
1/2 red onion, diced
1 garlic clove, minced
2 tbsp olive oil
1 tbsp red wine vinegar
1/2 cup chopped fresh basil
2 tbsp chopped fresh oregano
1 1/2 cups of cubed fresh mozzarella
Sea salt and fresh pepper to taste


1. Preheat grill.  Sprinkle chicken on both sides with salt, pepper, and italian seasoning or herbs de provence.  Grill chicken about 8 minutes on each side.  Place on a plate and cover with foil.
  2. Heat pot of water to boiling, add pasta.  Cook according to package directions
  3. Meanwhile stir all ingredients except cheese in a bowl.  After pasta finishes cooking, drain and let it sit to cool for 5-10 min.  Add pasta  and mozzarella to bowl with tomato mixture and stir.  Dice chicken and add to pasta to serve or serve chicken breast whole on the side.  Enjoy!!
