No Bake Energy Bites
Ok, so this was one of my very first posts on Pinterest. That was forever ago and I know these little things have gotten around..but they are seriously so good I’m kicking off all the yummy foods I love with these. I have a sweet tooth ok. I need an outlet besides Reese’s and these are perfect. It’s just enough of a bite of something sweet plus they have some good stuff in them(and my kids LOVE them). I’ll eat a few of these after a workout and its just enough to satisfy. It also keeps me from overdoing it on my next meal when I’ve had a large calorie burn. I’ve made these my own after playing with the recipe, which is the beautiful thing about these. Ok, enough chit chat…..
No Bake Energy Bites:
1/2 cup dark chocolate chips
1 Cup rolled oats
1/3 cup honey(this week I added about 2 tbsp of maple syrup..yum)
1 tsp vanilla or almond extract
1/2 cup peanut butter(I use Jiff Natural)
1/4 cup flaxseed
1/2 cup toasted coconut flakes
Mix all ingredients together and chill in the refrigerator for about 30 min. Then, roll into balls. Adjust the ingredients if needed to your desired consistency. I keep mine in the fridge because I like them cold but you could also store in an air tight container in your pantry.
*you could add canned pumpkin, chopped nuts, dried fruit, Justins Hazelnut Spread, or just about anything. Just adjust the PB and honey to make it sticky enough to shape into balls. You can also add vanilla or chocolate protein powder to these. Yum!
